Big Bores, how big can you go before........

the vibration is unbearable? (assuming bar weights, aftermarket engine mounts etc are used)

Being it is a twin you are at least in better shape than a big single but over 500 you will start to see some strong vibration. This is likely a question for the Banshee HQ guys.

Once you get that big you end up with a diesel rather than a peaky motor as well which is one of the biggest turn offs for me.

I thought those cpi dm cylinders were quite peaky?

The only reference I have seen about the >500cc builds is they have piles and piles of torque and are called 'diesels'. Have not ridden or built but you were obviously hunting for some reply so relayed over what I had heard. Again, banshee HQ has piles and piles of info. and builds...

Depends on your definition of "unbearable".
And a properly balanced crank can take away the shakes.
