I’m wondering if anyone has any thoughts about putting an rd500 engine into a newer yamaha R3 chassis?

Anything is possible if you throw enough money at it. I expect you could buy a new R3 and a new R7 cheaper than buying an R3 and a rebuilt RD500 motor and then doing endless modifications to the R3 trying to make it all work. When you're done you'd likely find it all very disappointing.
It sounds like a good way to turn a huge pile of money into nothing. The end result would be something no one else would ever buy and you'd be left selling it all off as parts to recover as much money as possible, and you'd never get back anywhere near what you put into it. Money pit is an understatement here.

I have a complete motor and all the parts to put into another chassis. I’m just exploring chassis options. I was thinking about an R6 chassis. You noticed the tiny single brake disc, did you?
So you'd at least need to use a different fork/ front wheel with a dual disc setup.
